Anyone who knows me will tell you that unlike many praccies, I don’t double as Food Diva.  I cook yes…in abundance and I have been told on may occasions my food is ‘delish’ and no one leaves hungry but I focus my energy on preparing food that is super easy, highly nutritious and can feed masses fast!  I have little interest or time for cleaning up, sometimes let alone plating up (or even touching up this pic to delete the mess)!

Some people are naturally gifted in the kitchen. My mum and sister have the gift…the Food Diva gene I may have inherited must have a SNP! In particular, I abhor the whole Masterchef culture – where cooking has never been made to look so difficult and so out of reach of the mere mortal.  I know this issue can divide a room, many believe passionately that these are gifted individuals who use cooking as art etc.  I am on the side of ‘get over it people…make edible food easier!’  Sorry 😉

Following from this rant, I can say that one of my family’s all-time favourite desserts is what we like to call the ‘Chocolate Coated Frozen Banana’..because it is…wait for it…a banana on an icy pole stick, that I’ve dipped in seriously dark melted chocolate and then chucked in the freezer. Tada!!!  For the dairy-free among us, this truly is heaven on stick because the frozen banana has the texture of ice-cream and the brittle thick coat of dark chocolate compliments the sweet banana beautifully.  Must be the oldest trick in the book right?  But just in case you haven’t discovered this one I thought I’d share my little ‘realworld recipe’ 🙂

Chocolate Coated Frozen Banana Recipe:

  1. Peel 12 medium sized bananas
  2. Cut the bigger ones in half
  3. Insert icy pole sticks into bottom
  4. Melt 200g of 70-80% cocoa chocolate in a bowl over simmering water
  5. Dip bananas into melting chocolate
  6. Place dipped bananas onto baking paper on tray or board and pop in freezer – takes a min. overnight freeze to get the right texture
  7. Eat!
